Tatertots are awesome but not as good as a perfect shoestring.

bbq places tend to call them jojos

jojos are one of the riskiest to attempt...can be sublime or a soggy mess, same with fresh cut fries.

I can't imagine eating jojos for breakfast, mainly because they are coated in a mostly unpleasant super salty pseudo-Cajun season blend. They were a school cafeteria staple. Acceptable potato options for breakfast are home fries (not really a type of fry), hash browns, or latkes.

So do I but I have given up on home fries. If I'm going to eat high caloric/fatty foods like fried potatoes, it has to be a lot more interesting than home fries. I think I've lost all taste for graininess in potatoes.

Easier French Fries
From Cook's Illustrated August 2009

2 1/2 lbs Yukon Gold Potatoes (about 6 medium), scrubbed, dried, sides squared off, and cut length-wise in 1/4 inch by 1/4 inch batons (strips)

6 cups peanut oil

1/4 cup bacon fat, strained, optional

Kosher Salt

1. Combine potatoes, oil, and bacon fat (if using) in large Dutch oven. Cook over high heat until oil has reached rolling boil, about 5 minutes. Continue to cook, without stirring, until potatoes are limp but exteriors are beginning to firm, about 15 minutes

2. Using tongs, stir potatoes, gently scraping up any that stick, and continue to cook, stirring ocacasionally, until golden and crisp, 5 to 10 minutes longer. Using skimmer or slotted spoon, transfer fries to thick paper bag or paper towels. Season with salt and serve immediately.

The best fries I've had in recent memory were at the Taos Diner -- cut small like home fries but deep-fried like french fries.

(Plus scrambled eggs/chorizo/jack topped with green chile, and really good wheat toast....one of the best meals on a trip full of great meals.)

That recipe sounds gross. Why are you A: adding unnecessary bacon into the mix and B: putting the fries into cold oil? The key to great fries is to double fry them. Fry them at 325 then remove them, bring the oil to 375 and fry again.

Because of the double frying trick. They're fried once at the factory, then frozen, and you do the second fry or bake at home to finish them off.

Curly fries are fun as an occasional novelty (maybe this is what made them attractive to vote for) but if I had to pick one of these to be the one true chip (uh, fry) it would be thick-cut, so that is how I voted

but my real answer is "anything except the frozen microwave fries the bf buys by the multipack", unbending identical sticks of pale blandness, presumably designed not to resemble fries in any way but merely to serve as a signifier of the ~idea~ of fries to people who think that real fries are too gluttonous or complicated for everyday home eating

There's a local burger place that has a machine that carves potatoes into really thick curly fries. Like a cross between a steak fry and a curly fry. Never seen that anywhere else.
